Our places

This map marks the route of a journey that I took in 1987, starting in Athens and ending in the mountain town of Nagarkot. Many of the places visited are shown in photographs on this site. I then travelled to Thailand, Malaysia and Singapore for a holiday to recover from nearly 12 months of hard travelling. On the way home, I visited Hong Kong and Southern California friends. When an old rugby teammate turned up, we went on a driving trip that took us from the Grand Canyon to the Baja Peninsula in Mexico. Sadly, the planned trip to Madison […]

Recipes by location

Over the past 40 years, I have travelled the world and experienced different cuisines that I have tried to recreate at home. This meant talking to chefs/cooks in their kitchens to get them to explain how they prepared their dishes. At home, I experimented to try to recreate their dishes. One lesson I learned very quickly was that getting hold of the right ingredients was key. This meant finding and exploring specialist grocery shops around west London, where I live. For most spices, I travel to Southall and buy in bulk. For Chinese, Malaysian, Japanese, Korean and Philippine ingredients, I […]

Ceviche

Ceviche, also spelled as “cebiche” or “seviche,” is a popular and refreshing seafood dish that originates from the coastal regions of Latin America, particularly in countries like Peru, Ecuador, and Mexico. It typically involves the use of raw fish or seafood, which is marinated and “cooked” in citrus juices, such as lime or lemon. The acid in the citrus juice denatures the proteins in the fish, giving it a texture and appearance similar to being cooked with heat. The resulting dish is a flavorful and tangy seafood preparation with a unique texture and taste that highlights the freshness of the […]

Piquant scallops in creamy champers sauce

Scottish scallops cooked in a creamy champagne sauce with fresh red chilli make for an exquisite and elegant dish, combining the delicate flavours of the sea with the luxurious essence of champagne. The result is a tangy dish that balances the natural sweetness of the scallops with the sophisticated, slightly tangy notes of champagne, all wrapped in a velvety, creamy texture. It’s a delicacy that pairs beautifully with a glass of champagne, providing a culinary experience that is both indulgent and refined. 0 likes

Roast vegetables

West London slow roast beef without roasted vegetables and good gravy is like strawberries without cream. The roasted vegetables should be crisp, crunchy and tasty. I like to roast a mix of root vegetables with butternut squash. The more, the merrier.I have also tried beetroot and sweet potatoes, which also work well.Gravy made using the fat and juices from the beef should complement both the roast beef and the roast vegetables. 0 likes
