Our places

This map marks the route of a journey that I took in 1987, starting in Athens and ending in the mountain town of Nagarkot. Many of the places visited are shown in photographs on this site. I then travelled to Thailand, Malaysia and Singapore for a holiday to recover from nearly 12 months of hard travelling. On the way home, I visited Hong Kong and Southern California friends. When an old rugby teammate turned up, we went on a driving trip that took us from the Grand Canyon to the Baja Peninsula in Mexico. Sadly, the planned trip to Madison […]

Basmati rice

Basmati rice has a name that derives from the Sanskrit word basamati, which means “fragrant.”Basmati rice is a North Indian variety of rice grown in the foothills of the Himalayas. This rice can be described as having a nutty flavor with a hint of floral notes. Many chefs and home cooks like working with basmati rice because it has a long grain that is slightly tapered at the end. 0 likes

Chiswick chilli con carne

This is a warming dish from West London and only vaguely derived from the traditional Tex-Mex Chilli con carne. There are a few additions that build up the flavour in layers and create a dish that will be a bit of a challenge to anyone with a delicate palate. 0 likes

Masgouf

One of Baghdad’s best dishes is Masgouf (مسقوف), grilled fish spiced with salt, pepper and tamarind, then placed in a metal grill and barbecued in front of an open flame on the pavement. Served with rice, cooked with tomato paste, or prepared with saffron, salad, and pickles, it is a delight. The fish is cooked near the coals of the fire altar, a common feature shared by all Masgûf restaurants. The said “altar” typically consists of a big open-air area centred by a raised, podium-like sandbox that is either round, octagonal or sometimes rectangular and in the middle of which […]

Asam Laksa

“Asam” means sour in Malay, and as you may have guessed by now – the broth for this Laksa is slightly sour from the use of Tamarind and savoury from flaked Mackerel. This recipe is my version of this classic dish. 0 likes

Kimchi

Kimchi, also spelled gimchi, kimchee, or kim chee, is a traditional fermented Korean dish made of vegetables with a variety of seasonings. This is Korea’s national dish, and there are hundreds of varieties made with a main vegetable ingredient such as napa cabbage, radish, scallion, or cucumber. Kimchi is also a main ingredient for many Korean dishes such as kimchi stew (김치찌개; kimchi jjigae), kimchi soup (김칫국; kimchiguk), and kimchi fried rice (김치볶음밥; kimchi bokkeumbap). I first ate kimchi in New Malden, where there are many Korean restaurants. Kimchi is so addictive that I had to have some at home. […]
