  “Dry-Fried Sichuan Chicken” or “Gan Bian Si Ji (干煸四季)” is a popular Sichuan dish known for its dry, flavorful, and spicy profile. The classic dish in Sichuan cuisine originated in the Sichuan province of southwestern China and includes Sichuan peppercorns. Grilled Portuguese sardines


Grilled Portuguese sardines make a classic dish, often celebrated for their simplicity and delicious flavours. Mrs F and I visited Portugal many years ago and found a small market not far from Lisbon. One of the staff was cooking sardines served on fresh, crispy bread. There is something particularly good about eating grilled fresh fish in the open air.

Souvlaki


  Souvlaki is a popular Greek dish consisting of small pieces of meat and sometimes vegetables grilled on a skewer. It’s often served with pita bread, tzatziki, and various toppings such as tomatoes, and onions. I first tasted souvlaki in 1978, having caught a bus in London that took me to Athens for a £10.99 (as far as I remember) return fare. Just before boarding the bus back to London after three weeks in Greece, I found a nearby souvlaki stall and bought one of the best snacks I have ever eaten.

  Having hired a 4-wheel drive vehicle, we were driving around Namibia. One night, we stayed in a remote lodge that only had Kudu meat on the menu. This was a problem as the only meat my five-year-old son would eat was chicken. Yakni soup


  After travelling by foot and jeep between Chitral and Gilgit over Shandur Pass, I needed food to regain strength. I had been suffering from amoebic dysentery, which was not the best preparation for a walk of over 100 miles in mountainous terrain. The result was that my weight plummeted. I stayed in the Gilgit Tourist Cottage, where they served a wholesome meaty soup made with fine noodles and fresh coriander, which I ate most days, and gradually, I started to regain body weight.   In 1998, I visited Riyadh to run a project for a bank. The funniest part of the trip was taking our Ethiopian housekeeper to the supermarket to buy supplies. We lost track of her as she wore a burka, and we could not remember what her shoes looked like. We had to hang around the checkout until she found us.
